Afterthoughts
Easy salad recipes that are quick and delicious. The chicken is first prepared by smoking it on the grill. After it has been chilled in the fridge overnight, you can begin to make your chicken salads. The added smokey flavor with the lemon juice is outstanding.
Based on my experience here are some tips.
1. Flavor and texture can be adjusted by leaving out carrots and cheese, or replacing them with chopped cabbage, tomatoes, etc. Anything that would add color, flavor and texture. I personally like the crunch of the carrots.
2. The mustard balances out the mayonnaise flavor so it is not so strong.
3. Any bread can be used including tortilla wraps, white bread, etc.
4. If you do not grill, just use a rotisserie chicken from your local grocery store. It works too.
